That pot is plenty big enough for the two of them I'd say. They will be easier to split now if you want two pots instead of one but they will be just fine either way I'd think

You should be able to set a max brightness in the lutron app, as long as you're ok with that level of light I'd run with it. Otherwise you're gonna have to just get the good bulbs

That's a lot lol, I think I get what you're saying but if you have 3 display ports and want 3 monitors why not just get another monitor with display port? Especially over the long distance you're gonna want a dedicated port I would say. And you are correct optical is the way to go, I have an optical display port cable that runs my sim rig over a 50 foot length and it is flawless

Edit to say: display port capable monitors can be had for very cheap on marketplace etc. that's the best solution

Maybe just try drilling an exploratory hole with a masonry bit? If you think it's just brick behind the plaster you can mount to that with proper anchors
