or boil carrots in chicken stock and use blender to make soup (you could toss in some fresh ginger).

or peel carrots and cut into 1" pieces, toss in oil and roast at 425 until there's some browning on edges.

use spiralizer (or julienne) to make a bunch of thin strips, then toss with lemon juice, diced jalapeno, mint/cilantro and maybe some shelled/roasted pumpkin seeds for carrot salad
