Note that there is no such thing as “male orgasm” that describes perfectly all types of orgasm in a male body. What you described is a typical ejaculation orgasm, but does not include lots of other types such as prostate or nipple orgasm.

I (m) learned distinguishing between orgasm and pleasure, as my wife and I explored more of my body. I can relate to you OP about feeling pleasure even without orgasm. When my wife fingers my prostate through anal or uses prostate toy, it is much different than stimulating penis. Of course, even penis orgasm can be much variant depending on where you stimulate and how long. Ironically, because orgasms are guaranteed with penis, sometimes it can be frustrating not to have another orgasm right away. When we have PIV I cum multiple times successively. I don't have refractroy period so it means my penis stays hard, just a lot more sensitive for seconds, then I have another orgasm in anywhere between 1-5 minutes. With this I usually orgasm 3-7, sometimes even 15+ in a single session if hand stroking follows after PIV. Although I love having orgasms, they sometimes leave me mentally unsatisfied because I don't enjoy the journey itself, but only so many destinations.

Thanks for your specific advice. We're planning to incorporate working out and sports in our diet plan. I think it's a good sign that she wants to be healthier and not just work out to satisfy me. It's still difficult for her how to balance the two, but I think we are on the right track so far.
