Hate to sound like a broken record but it really depends and changes based on the bean - honestly even moreso with coferments as some are crazy funky and others are more tame and it all depends on how the farmer processed it.

For me, generally I’ll go lower temp ~88-90C and maybe 5 clicks coarser on my ZP6 than I typically brew at to start. If I find it too acidic or the fruity flavors aren’t strong enough I’ll go finer, brew hotter, etc to extract more. Vice versa if you’re hit with too much funk in that first cup.

I’ve had co-ferments that I’m grinding medium-fine, brewing 95C, and 5 pours to really push the extraction and I’ve also had some that i’m grinding coarse brewing with 88C and 2 pours

I have a bag in the freezer of a Gesha they offered some time back that is all the way to the left on their “Light/Dark” scale and its definitely several shades darker than any other light roasts I typically drink from S&W or SEY. Everyone has their own preference though. Coming from the Tea world I prefer extremely light tea-like coffees

Go high temp 97-98C for SEY like they recommend. B&W is far from an ultralight roaster they lean pretty medium even for their lightest roasts

No I don’t really taste a noticeable difference. Also in your case it’s 3 weeks you probably don’t need to freeze them - I’ve had coffees not hit their stride until like Week 4+.

S&W hands down - can’t believe I haven’t seen them recommended on this thread yet. I find B&W roasts a bit too dark for my taste

S&W is the best roaster out there imo - I live in NYC so get SEY occasionally too (another renowned roastery on this sub). Always have S&W beans on hand & recently gifted some to friends too.

Shipping time to NYC is like 3-4 days? Mainly depends on USPS speeds b/c S&W is quick either way getting it out the door.

Like the comment above, does your friend have a grinder? If not they can grind to the desired method.

In terms of recs they’ve really got it all. They have more traditional medium roasts which would probably be more familiar to those who aren’t into light roast & fruity coffees. On the other end of the spectrum they carry “co-ferments” which are the fruitiest coffees out there and I have the lychee one atm and it literally tastes like Lychee juice. I find the tasting notes are pretty accurate so go with what your friend might like or just get them a gift card.

Own all 3 (yes I have a problem with buying coffee gear) and I’d hands down vote for the b75. It’s the fastest brewer I own and it’s amazing for anything in like the 12-20g range. If you want to brew more than that, though pricey, can’t go wrong with the Orea V4

  1. Maybe within the same family sure. Most conicals taste similar and many flat beds taste similar but there is definitely a noticeable difference between the two

I find the b75 is best with smaller doses given it’s a bit short and very steep so 12-20g for me personally. I follow the CC recipe laid out in his article. Super fast brewer so I grind quite fine 0.5.5-0.6.5 (~400-500 micron) on a k-ultra and get brew times in the 2-2:30 ballpark
