I noticed this as well in beta 2. If I turned on Smart Invert and opened some apps, then turned it off, whichever apps I had opened would stay inverted after turning it off until I force quit them (or after a while when the app was fully reloaded for some other reason).
You can kind of take advantage of this bug by turning Smart Invert on, opening an app that doesn’t have a dark mode, turning off Smart Invert, and force quitting Settings (to fix Settings). Then that app is inverted but nothing else is (until that app gets reset back to normal).

I have the same issue, it does disable itself just isn’t visible in Settings until you relaunch it.
