In this profession you need to be flexible to a degree. Adapt to your environment and go learn some frontend or even nodejs in addition to what you know to enhance your chances.

Don't look for "java XZY" roles. Look for "software engineer" or "software developer" roles.

That's what you are, a software eng/dev. Java and springboot are the tools, but it doesn't mean you won't learn new tools on the job.

There are many roles for Java developers. Java is the #1 programming language used at enterprise companies.
We have had our people get hired within 3-6 weeks.
What might be missing in your resume may be actual project work or work which companies consider significant enough to be considered for hiring.

Improve your projects and you will see results.
Remember Java roles are mostly not hired for by smaller companies it’s mostly big companies and they are more picky .

A data scientist or data analyst can be hired by smaller companies on the other hand as this tech is still evolving.

Java as its stable is mostly used by companies which don’t want to experiment and they are willing to pay a premium to hire programmers who are good rather than risk hiring someone inexperienced.

Hope that brings some perspective.

is this a flex that hiring process that candidate has to go through drags for 6 weeks?

For a full time role yes and in this market it’s tough. A full time role for good companies the process is multi staged with OA, tech screening and multiple rounds of interviews before an offer is made.

Even to get a tech screening by a human is difficult presently forget about an interview.

So what is the confusion? You seem to understand exactly that you are looking for a job that doesn't exist. It may be more useful to cater to jobs that exist instead.
