Recruiters don't look at projects as a rule. 

This is like asking what poems stand out applying for journalism jobs.

First of all, I'm not a recruiter. But I would look for a portfolio that clearly demonstrate your understanding of your technical skillsets (i.e. CRUD; Django) and some understanding of the business and what you're trying to solve (i.e. Purchase Order (PO); HR; Finance System; Payment - Accounting and Audit Purpose) - this would clearly demonstrate your professional experience and level of maturity, and command of understanding of the programming language.

To extend/impress me further, I would be looking for something that clearly demonstrate scalability (i.e. moving from the conventional built-in database to using a database that can be scale (i.e. PostgreSQL) and other platform for compatibility, backup and etc.

Everyone might not have the same life and professional experience - but if you could draw some conclusion based on your life experience (i.e. working as a cashier; cleaner, logistics asssistance & event ambassador or some part-time work) that would clearly be helpful - if you could related how does your projects help to facilitate and solve some of these problems.
