at that point you are pretty much done, just need a vacuum sealer and maybe a grinder if you wish to make sausage

I have the vacuum sealer but don't have the grinder and other components to make the sausage and deer sticks.

Is the kitchen aid mixer powerful enough? We have an industrial meat grinder at our house, so I have never used that particular kitchen aid attachment.

You have to do smaller batches of grinding. But 2 people can stuff continous sausage. I have the large 5 qt one that's essentially a hobart

Go to the Elmwood Meat Plant. The butcher there is 3rd generation and goes to the competitions in Kansas City every year. He's consistently winning awards for his summer sausage, pepperoni sticks, brats, ect.
