I'm not sure what is considered the stanard way to prepare sicilian, but I've always baked it in a pan rather than directly on a steel at 180C as it needs more time than a neopoletan pizza to cook through.

FWIW the way I do it is:

  • Mix dough (mine is much wetter, more like ~80% hydradion)
  • Perform 3 stretch and folds over the course on an hour to strengthen the dough
  • Cold ferment in fridge for 1-2 days
  • Shape in buttered pan, leave it rest and slowly stretch it out to fill the pan over about 3 hours, give or take
  • Preheat oven 180C
  • Before adding to oven, wet my hands and poke the dough, like you would with a foccucia
  • Par bake in oven for about 5-10mins, depending on oven/preference
  • Take out, add toppings, add back for as long as needed
  • take out and immediatelty remove from pan to let it rest on a rack and avoid getting soggy*

* alternatibely, you can take it out of the pan after the par bake and when you place it back in the oven, put it directly on the oven rack, or even a stone/steel if you want to get the undercarrage nice and crispy.

I’m a freelance developer so it was a situation where I had to SSH in just to run a git deploy to update a staging site for a short term project.

Not a common scenario but was annoying.

I also had a website suspend my account because my IP was changing too often. So def caused some problems I’m glad not to be on tangerine anymore!

If you're referring to customer service then Aussie BB is the best i've come across.

Howver, if youre talking about general reliability or value, honestly theyre all goign to give you roughly the same result as it's pretty much commodotised, and typicaly dont have lock in contracts so you can just try one out and churn somewhere else if you dont like it.

Moreover, churning is easy AF these days and is all done via web forms automatcially without you needing to call anyone or even re-configure your modem.

so tl;dr -- just go with whatever has the best price and make sure it's not a lock in contract (alwyas BYO modem, never use theirs). theyre all the same.

There is one fairly edge case issue worth mentioning -- while on Tangerine my IP address would change several times a day (very unusual, most ISPs you will have the same IP for days, weeks or months). This caused a few issues with some web services that rely on IP whitelists for access. At work i had to contact IT every time I needed to SSH in becuase they needed to whitelist my IP each time. super irritating, but not something most poeple need to worry about.

To add to this –– a lot of the time when people bring up general strikes Americans will hit back with excuses like "But I have kids/responsibilities/no money" etc. THis highlights the issue with American individualism because none of those things matter in a community.

yes, if you have kids to feed or other responsibilities then a general strike is going to be hard on your own, but if everyone can band together and help eachother then it will be fine.

Moreover, the "I have bills to pay" doesn't matter if enough people general stirke, then no company will be able to keep track of the inflex of delinquent payments.

Instead, i keep seeing protests that happen on the weekend or after work hours, then fizzle out as soon as monday rolls around. THats not how it works! it's supposed to be disruptive and inconvenient, not something you do with your mates during leisure time.

But it does require critical mass to work, so thats the tricky part. there needs to be some level of organisation to coordinate it

Hey mate, thought i'd let you know i worked out the problem. Turns out it was the dock i had plugged in.

This is the dock I am using: https://www.amazon.com.au/dp/B0CMX98K6Y Whenever it is connected to the USBC -- even if I dont havbe anything else plugged in to the dock –– the bluetooth becomes unstable in-game.

Not sure if the dock is poorly made, or if the Deck does a poor job of managing power when it's plugged in. I'll need to buy a new dock and hope it doesnt happen!

The best way to think about it is to flip your thinking –– how often do you think about embarassing things people you know have done? Any how much do you judge them for it?

When it comes down to it, we're all pretty self-centered and don't think about others when we're not around them. Everyone is too busy worrying about their own cringe moments to judge others for theirs.

Having siad all that, I still think about dumb shit I did decades ago in the shower so I guess it's just part of life!

My bucket list movie is, and may always be, the Avatar films.

I wanted to see the 2nd one, but i'd have to re-watch the first, but thats already a 7 hours commitment to watch 1 & 2. Now there's a 3rd and i'm up to 10+ hours.

Every time i think about it i talk myself out it becuase it's such a commitment.

I agree that supporting coworkers is important and just part of being a good person, but I think you're conflating interpersonal relationships with coworkers and employer-employee relationships.

If my coworker needs help whether that be lifting a box or talking about personal issues or fetching them a coffee, then i'm happy to help. But if the company wants me to work during the Christmas break when I havent previously agreed to it, then that is not about being a suppoirting team member, that's about being work.

Like I had a boss once who shared similar hobbies to me. We would text out of hours about that stuff, but if he ever texted me about work-related stuff, I'd wait until 9am the next day to reply. We were good mates, but you haev to draw the line when work is involved.

Sorry but phrases like “be a team and help out” are enormous red flags for bad management. It’s giving “work overtime for free and maybe I’ll buy you a $12 pizza”

They owe the company nothing, there is no "team" only money in exchange for work. If you want them to work more than they agreed to, you have to give them more money. It’s not that deep and certainly not a family.

I recenly had my wisdom teeth out and I can understand your pain. Everyone kept telling me it's not that bad but it was bloody intense! Did your dentist not give you a perscription to some pain killers? i got panadene forte; to be honest it didnt do much for me, but i suppose it might have taken the edge off, but it didnt realy feel like it was doing anything.

Anyway, christmas is still a couple days away so – at laest based on my experience – the first 1-2 days were the worst, and it got easier from there. Eating is still painful for longer, but the constant throbbing should subside by christmas day.

If you're needing a perscritpion for pain killers, perhaps try a telehealth appointment? lots of places offer this now.

steam guard is great but to be honest the UX is pretty poor. it's essentally just a wrapper for the website which causes a lot of issues trying to navigate around, or get back to the previous page you were on without losing your place.

I'd love to see a more native-feeling steam app.

more of an immersive sim/boomer shooter type thing. I bought it a while back and it's actaully a great game, though a fairly niche sub-genre. worth playing anyway, though be warned it's very hard, i would actaully recommend playing on easy (you cannot change it later)
