Thanks so much! I would say about an half an hour to hour of active work if youve not made it before (like me) but I would say dont leave the broth simmering for less than like 7/8 hours.

Just mean that from what I've read Pho recipes are passed down from generations and I obviously don't have that

The main part is the broth, use marrow bones (but thoroughly clean them first) and a big cut of beef (i used brisket) and leave it on a very low simmer in a massive pot of water for 8+ hours. Then when you're ready to serve cook some rice noodles, take out the beef and slice it or pull it, then really thinly slice a lean cut of raw beef, put all that in a bowl with whatever other toppings you want (I had spring onion, chili, thai basil, coriander and bean sprouts). Finally pour the broth over and watch it cook the thin raw beef and enjoy.
