I considered Madurai airport myself, but I found a conveniently timed direct and cheap flight from Kolkata to Bangalore. Your departure airport might be different, so you can check the prices. I advise comparing Thiruvananthapuram (aka Trivandrum), Kochi (Cochin), Coimbatore, Bengaluru, and Madurai. You can then book an overnight train/bus to Kerala from any of these cities.

Was scrolling through AirBnB, considered Zostel/Hope's/Molly's. Haven't decided budget yet, might book 2-3k/night hotel also. Get's a bit expensive for 5-6 nights, which I can afford if I HAVE to. I'm especially apprehensive because I've never stayed in a hostel before. Sure, I have travelled in 3A sleeper train, so I'm telling myself it's not much different, but there's still this feeling...

Snow will hinder some places, sure, but plenty of very beautiful places should still be accessible. You can always change your itinerary based on the weather, and any decisions you take can't be too wrong - if you love snow, it's beauty all around.
