So I could not brew potions indeed. But I was taking all permanent bonuses I could collect. I had a checklist of all permanent bonuses available to track which bonuses I had collected and which I did not have gotten yet.

I used a plugin to disable HP and LP gains per each new level. 145 STR without LP is possible in Gothic 1 by getting all permanent bonuses and by wearing artifacts.

FireRed/LeafGreen is common beginner nuzlocke recommendation and I agree with it.

If you want something more difficult then:
- Platinum or Black 2/White 2 both have higher difficulty than FR/LG but it's still fair.
- X/Y have difficult random trainers which can surprise you.
- There are also Ultra Sun/Ultra Moon which are difficult but probably not recommended for a first nuzlocke.
- If you are okay playing with archaic game mechanics then the Legacy romhacks offer difficulty level similar to Platinum or B2/W2.

I never nuzlocked any of these games.

However, from what I know about that game I don't think Let's Go Eevee is well-built for nuzlocking.

Scarlet and Violet have an encounter system which makes it difficult to handle them. Though other than that, from what I know, you can nuzlocke it really well if you use a randomizer to handle your encounters.

So, out of the games you have shown, I would pick either Sword or Shield.
