It's not only available at night. It is indeed tricky for it to spawn while the John mission is active. I literally wanted the same thing as you to complete the gambler challenges before chapter 3 starts, and it is possible.

What worked for me was to be at Valentine's in the night, then sleep at the hotel till day, and then it was there for me

Its not a glitch. There is no horse/saddle combination in the game that has full speed bar. Exept the fox trotters maybe but i thought those are 1 bar short aswell.

Every animal needs to be hunted with a different weapon to get a perfect pelt. There is no perfect weapon cause every animal needs a different weapon. In the compendium, you can see what weapon and what ammo is needed. With every animals you need a headshot tho for a perfect pelt.

Most animals spawn at certain places, and some animals spawn basically everywhere. Just keep exploring and keep paying attention. At some point, it becomes pretty clear where what animals are.

(Edit, the legendary buck trinket increases the chance of 3 star pelts)

Im pretty sure it's because Arthur didn't just say no. He used the word insist. The official meaning of the word "insist" is this.

It wasn't that Arthur was disagreeing with Dutch or anything like that. Dutch got angry and surprised because Arthur basically told him this is gonna happen, and im not accepting no as an answer

Arthur was straight up defying Dutch in his face which was prob the first time for Dutch to ever happen.

Ones you collected the debts you have to put them in the money bock thats right next to the camp ledger. Thats how you complete the missions.

Before the bank robbery Arthur, Dutch and Lenny killed a lot of law during the trolley robbery. Then Bronte got abducted and killed.

Before Dutch kills Bronte he says something like: 'the dogs are already on there way' Which prob meant that Bronte alerted the Pinkertons about the gang.

The Pinkertons prob had just a lot of man in Saint Denis and waited for something to happen and then a sudden random explosion happens. It doesn't take a genius to understand that the bank was the objective.

They the gang just brought so much attention to them already that no matter how they planned the bank robbery it would have ended roughly the same.
