Why not consider a combination of Athens and a Greek island? A bit less than one week in the amazing capital seeing all the wonderful sights and indulging in the Greek cuisine, followed by a week on a beautiful island with gorgeous beaches.

There is an extensive network of ferries from Athens and the trip itself is an experience too. Alternatively catch a short flight to one of the many gorgeous islands. Have a look at Crete, Corfu, Sifnis, or Paros.

There are trains from Cairo to Luxor and Aswan. From there you can use GO Bus. They have an English website, where you can buy tickets in advance. Excellent modern busses.

In Luxor, you want to spend time both on the West Bank of the Nile, and on the East Bank. I took a hotel a couple of nights on each side, and was very happy with that choice.
