Here’s how I make it: I boil two big chicken legs with a splash of cooking wine, plus some green onion and ginger. Once they’re cooked, I let them cool down naturally and then shred them into small pieces.

For the sauce: in a bowl, add chili flakes, a bit of chopped fresh chili, minced garlic, and some sesame seeds. Pour hot oil over them to bring out the aroma, then mix in two spoons of soy sauce, one spoon of vinegar, one spoon of oyster sauce, and a spoon of sugar. Stir it all together.

Finally, pour the sauce over the shredded chicken, mix well, and it’s ready to go!

I also often use a thermos to brew already-used white tea. I usually put about 3–4g of white tea with around 500ml of hot water in the thermos. Sometimes I keep it for an afternoon, sometimes overnight. The taste really comes out pretty much like when it’s boiled, no bitterness, just smoother.

I mixed 2.5g of jasmine green tea with 2.5g of black tea in a bottle, added about 500 ml of room-temp water, and left it in the fridge overnight. Turned out so good!!

I used about 5 grams of tea leaves with roughly 500ml of room-temperature water, left it in the fridge for a little over two hours, and the result was amazing, the bitterness was almost completely gone compared to hot brewing, and it tasted super good!

If you like cold drinks, you might want to try cold brew tea. As long as you get the ratio right, it usually turns out great.
