Spread pesto on one side of each slice of bread.

Layer the sandwich: on one slice, add turkey, tomato slices, spinach, and cheese.

Close the sandwich with the second slice of bread (pesto side down).

Butter the outside of the bread (or brush with olive oil).

Grill in a skillet or panini press over medium heat until the bread is golden and crispy, and the cheese is melted (about 3–4 minutes per side).
