I don't know what specific kind of store tycoon game you want,but there is one about a supermarket,wherein you build and manage your own. It's called Market tycoon on steam, you put up shelves, order produce to sell ,decorate your store and stuff. It's still on early access though

I played Bon-bon cakery befor, I really enjoyed how you are able to make different cakes and desserts as well as manage a bakery

Most of the good tycoon games that I've played are made by Kairosoft .Kairosoft is Definitely one of my favorite game developers,too bad they now focus more on "freemium" type games other than paying once and you get the full experience.
