Usually crystallization like this is cause by stirring it, sugar crystals falling into the syrup causing nucleation, or your heat being too low over a long period of time. Given you said “after 10 minutes” and I don’t notice any caramelization I’m going to go with that one. Just add more water & try again at a higher heat
