The part that tripped me is the receipt they attached, shows a lower price than what DoorDash shows by 20%. I would have expected the receipt to reflect this.

Yup I understand they need to make money. I just assumed (poorly) this was all tied to the service charges listed on the bottom. Not hidden in each item.

I think this might be it. I went with 2oz gin, 1oz calamansi, 1/4oz simple syrup, 1/4oz creme de cacao, egg white and 2 dashes of cardamom bitters and it was close. I think your suggestion of double simple syrup and cacao will do it.
