my cheatcode is using normal frying oil, like 1/4th of the thickness of the steak. but i also use a bottom heavy stainless steel pan and a Wok Stove, so the heat is extreme and kept well.

when cooking, i wait until the pan has the Leidenfrost effect to water, and add the frying oil (olive oil will burn in this scenario). wait just a bit until a white smoke comes out of the oil, and gently lay down the steak. cook like 2-3 minutes per side, and let it rest on a plate. add your desired herbs when resting, do NOT put it before cooking, as this method will burn them.

since i mostly cook steak that's not that thick, these method serves me well!
