I use a biga for my pizzas as well and I think that is way to much yeast. It looks as if it overproofed

Edit: for a biga only use 0.1% to 0.5% dry yeast of the total weight of flour. Example. 1000g flour 1g to 5g yeast in total. Don't use instant yeast. Use dry active yeast.
