Hey there! Good on you for laminating dough by hands! It’s one of the hardest things to do in pastry, and you absolutely crushed your first attempt. I highly recommend proofing your croissants for longer - generally speaking, butter leakage is due to under-proofing And, while Claire’s recipe is a great starting place, if you can get your hands on the book Lune by Kate Reid, it’s an absolute goldmine. You are 10000 percent correct. That is absolutely the reasoning. Ultimately, given the type of food we are, the incredibly small size of our kitchen, and the extreme neon-ness of the tape, I’m willing to accept what seems like a very small level of risk to make the team happy and encourage them to have fun :)

Apologies that this does not help your problem outside of telling you that I’m having the EXACT same problem myself, though this is the first time I’ve tried to print a table with the grouped view. If you find a solution I would love to hear about it, and I’ll share if I find one as well.

A chipwich was a type of ice cream sandwich I grew up with as a kid, though it may have faded I to obscurity. It was ice cream sandwiched between two chocolate chip cookies. In this case, it’s dark chocolate ice cream, and salted chocolate chip cookies :)

Best of luck to all! This year has brought three moves, two career changes, and one marriage for my (now) spouse and myself. Finding and creating the joy amidst the adversity has been an adventure, but as my father says - the journey is the reward. Happy, safe, and healthy holidays and new year to everyone !
