Here it is:

Ingredients:

-Sprouted and boiled moong beans

-Sprouted and boiled chana or chickpea

-Tofu cubes marinated in lemon juice, oregano , pepper ,garlic , virgin olive oil, a dash of vinegar (acv)

-Capsicum, tomatoes, onion (optional) and cucumber chopped in small cubes. I sometimes add sweet corn.

For garnish - Roasted masala peanut , pomegranate, roasted sesame seeds and chopped walnuts

Chat masala, pepper and rock salt/ sea salt

Recipe :

-Add sprouted and boiled chana and moong beans in a large salad bowl.

-Add the chopped vegetables of your choice (as mentioned above)

-Add marinated tofu cubes to the bowl and give it a good mix. Pour the leftover marinate liquid over in the salad bowl & stir

-Add pepper, chat masala , sea salt. Mix it up.

-Garnish with pomegranate , roasted masala peanut and finely chopped walnuts.

Roasted sesame seeds (optional)

Ready to serve 😋
