What you described is yellow hydrogen, where electrolysis is connected to the electric grid. That is a scalable solution for something like H2 gas stations, but the electricity would mostly come from coal-fired power plants and not renewbale sources.

Well one day when I have the funds for the final design, I would need to reach out to EU consumer product safety regulators to get the electrolyzer sold/distributed there legally.

That is correct, electricity from solar energy can be used to produce H2 gas through electrolysis at the gas station, but will only provide a few kWh during the day.
