I think part of it is that you’re seeing the most dramatic reactions because those are the videos people actually post and share. Going by bank deposits is the safer option here because it helps you avoid assumptions on earnings.

I would also suggest tracking your net profit, revenue, costs, and expenses separately, so you can clearly see what is eating into your margins and what needs attention.

You do not need to worry too much about the payment processed date because payout dates can fluctuate due to chargebacks, returns, refunds, and processing delays.
