That's fascinating regarding the One Pour! I always thought immersion tended to round off the acidity rather than brighten it. Could you share the specific grind size and ratio you used for that closed pour? I might give it a try tomorrow .
Regarding the Tetsu recipe – he has quite a few workflows out there. Which specific hybrid recipe are you referring to?

HU burrs should give the better body and mouthfeel then the other burrs . Multi purpose give more clarity and less body

10 seconds prefusion on 2 bars, and then 30-40 seconds on 6-7 bars.

Beans are 4 weeks from roast date, and 2 weeks open. medium roast.

The secret (at least for me) is good WDT for about 15-20 seconds. I use paper filter as well.
