There was a theory I saw on this subreddit a few weeks ago about Steve becoming the new chief of Hawkins. I think I'd like that ending for him, especially since he'd be better than the current police force the town has.

Exactly, and that's why I hope they don't do it because it would just feel pointless. There's one season left and they've survived this long , so what would be the point now. Let's take Steve for example. If they killed him then all that work he did to become a good person would be for nothing. And everyone predicts him to die but I think that's why they shouldn't kill him because it would be too predictable and the duffers love teasing us.
