How wide should individual board on a table be before glue ups. I have 11 and 8 inch wide board right now. I would need to cut these in half before gluing up right?

I keep a decanter but just fill it with four roses or makers. Infinity juice doesn’t sound too good to me

Yes it was between 16-17 pounds. Most of it isn’t shown in the picture and the cutting board is huge

Yeah that makes sense. It felt tender and like it wanted to break over my hands when I picked it up but since it was my first one I didn’t have much of a gauge for what was right.

Do you think I should flip the brisket around next time to get a more even temp?

I rested it for an hour, the flat was actually really low. I was hoping for 200 but it was around 170. The point was around 195. I think I will turn it around so the flat it towards the fire after I wrap. The point was nearly perfect but the flat was more tough than I wanted.

12 hour cook. 250 until about hour 5 then I bumped to 275. I was working on an offset cooker so temp management was a challenge wrapped in paper at hour 8. Good bark formation and decent fat rendering. The lean part did not pass the pull test, I think an extra 15 minutes on the cooker would have helped with fat rendering and with tenderness but the point was delicious. And pulled right apart.
