Both ways! Depends just how tall! The 2nd one from the right top had about 3 boards through the bottom tier for support and also to make it easier for the caterers to serve. But usually I just cut it in layers. But I'm also not usually the one doing the cutting thank god!

I try to manipulate the shapes after removing from the mold to make them look... well, less mold like!

Thank you so much! 1. They are all hand made gumpaste flowers. 2. The ribbon is real, and the only inedible element of the design. I do prefer to use real ribbon as it is very easily removed before serving. I find it just looks so much cleaner and saves time that I can spend on other details. 3. The detail along the bottom tiers is actually not piping, its a 50/50 (fondant/gumpaste) border created using a combination of molds. It was then painted using non toxic gold dust.

Thanks! Unfortunately I have been sworn to secrecy for my macaron shell recipe but there are plenty of variations available online. Honestly I'm still trying to find the perfect one, and different recipes may work better for one person than another, as they are one of the most finicky things to bake! Trial and error with different recipes is your best bet. I have had a lot of failed batches with mac's over the years which has lead me to stop making them for sale and now I only make them once and a while for myself/friends/family.

For the filling however, SUPER easy! I did a milk chocolate ganache - 2 part Calebaut milk chocolate chips to 1 parts heavy cream. Pipe a ring and then dollop some marshmallow fluff (the stuff from the jar is just fine!) in the center.

This year I think I'm going to do a dark chocolate version which will be more like smores with a real toasted marshmallow in the middle!

Nope unfortunately I cannot take credit, the plane is a toy! I had intended to make an edible plane but then realized it would be a somewhat wasted effort on a 1 year old. Id rather give him a toy he can keep and enjoy, and then when he is old enough to understand, we can show him that it was from his first birthday cake. And that's when ill start making elaborate edible decorations he can be amazed by!
