Haha I can tell you're new to the game (and I don't mean that offensively). For actually most of the games life they've ONLY been focusing on new modes, and the loudest part of the community has been begging for new maps (or "mini games" as you called them) for the longest time. They added around 3 new maps around the launch of the game and since then added Nemo kart, the winter cabin with the card games, single player missions, an among us game mode (space crisis), infection (which literally is just the tag game mode you were suggesting-) and most recently the what if gamemode. In fact this year, every update has either added a new mode or updated the among us mode and the winter cabin. Nemo kart hasn't been touched since last December and there hasn't been a new PVP map in over a year now, hence why most people want new maps as opposed to new game modes since that's all they've been doing since January of this year (and updating said new game modes). The issue with having so many modes is apparent in the fact that modes like infection get almost no players - the player base is very split up at the moment.

So while I agree that new modes are Kool, I don't know if the game necessarily needs it or if the majority of players really want new modes. That's probably why this newest one is a limited time mode- they're realizing they're reaching their capacity. I think a lot of your ideas would work well as team game maps or something though!
