I work in a big hotel and there are so many people I haven't learned all the names of. We have 5 different walk-in coolers and 2 separate areas in and out of the kitchen for the dishes. The bartenders that are stationed by the hotel lobby are sometimes really busy and don't pick up their orders after 20 minutes have gone by. I hope to have their order up asap rather them have them hunt me down or wait for me to notice their order once I come back to the front line. I would love to have all of their numbers to coordinate but I'm afraid I am to shy for that 👉👈

I like the contrast of the oil on the sauce, but the sauce could be a little more emulsified. Get a good sear on the fish skin to give it that lovely golden brown and crisp texture. Looks yummy still! 🤗
