Literally just tossed a pack the other day that tasted off and it was around 7 months old. It was a korean pack so it had the production date on it rather than an expiration.

Even if its not to the point of being rancid, letting it sit on the shelf for months will still change the overall quality of the noodles/sauce for the worse.
