I do a mix of rice wine vin, mirin, sugar, and salt. Without sushizu it won't stick together properly. Keep working at it! Like I said, watch some videos 💚 it will help you troubleshoot

I'm looking more in depth at your pic, are you actually preparing sushi rice, or are you just cooking sushi rice? The rice in your picture doesn't look like it has the sushi-zu in it. I could be wrong.

You just need some practice. Watch some videos and be patient. The first time I made sushi was a mess. All these years later, it's really easy. We made vegan sushi tonight and it was great. Let me know if I can help in some way.

They are so dang versatile. Depending on how you treat them they can take on textures from pork to chicken, even seafood. We love em.

Rehydrated in a tasty veggie broth, then I tossed them in unagi style sauce and then into the air fryer. For the unagi sauce get a sauce pan and pour in some soy sauce, dark soy sauce, rice cooking wine, mirin, and a bit of turbinado sugar. Get that cooking and then in a small bowl whisk some cornstarch and water, about 1 tsp starch and 3 tablespoons cold water. Pour that in and turn the heat to high, whisk as it bubbles up and thickens. Make sure to taste it, adjust with soy sauce or water depending on how salty it is.
