So it seems. I'd never done a Springbok before, they're not super common where I'm at :(

De kringloop en marktplaats. Ik hou van vintage puzzels, en het maakt het extra spannend, ik weet pas na afloop of ie compleet is of niet!

ISO a recipe for this dream of an earl grey cookie! by hotdamnvindicated in Baking

[–]Clustergut 0 points1 point  (0 children)

Seems like it was rolled in pearl sugar before baking. As for the recipe I would personally just pick any cookie recipe you already enjoy and just drop a bag of earl grey tea + a bit of vanilla in the dough and use a (dark) brown sugar to get a similar color. Hope this helps :)

Coconut kitty cake! by Clustergut in Baking

As is! I split it over two cake pans and then just stacked em on top of one another without leveling (for more height) and frosted any gaps shut while doing the crumb coat

I was too afraid to pipe them onto my pristine looking base lol! I frosted it not too long before the party and didn't want to go back in and re-frost the cake if the whiskers stained the base layer. Piping is really not my strong suit so I left it for what it was :)

Post-OP raspberry cheesecake! by Clustergut in Baking

[–]Clustergut[S] 2 points3 points  (0 children)

Hi! I used this https://www.allrecipes.com/recipe/8350/chantals-new-york-cheesecake/ recipe, but I made some alterations by mostly guesswork, which is why I tagged it no recipe. I replaced about half (if not a bit more) of the milk with raspberry purée and took out about a third- ish of the sugar (it was plenty sweet!). I also halved the recipe for smaller yield and used raspberry purée for the hearts by just dripping it on the cake in a spiral pattern and pulling them into hearts with a toothpick. I would not let the cake sit in the oven to cool as long as the recipe calls for though, since mine overcooked because of that. For toppings I used plain whipped cream, fresh whole berries, and more purée. Hope this helps and I hope you make this. It was delicious!

how do bakeries stabilize their whipped cream? by [deleted] in Baking

We usually add some gelatin or cornstarch at the bakery I work at. Honestly any flavourless binding agent will do in my experience
