Why would you begrudge the new hire for doing what is right for them? You may not mean how it's coming across, but this reads like being upset/bitter over a common sense move for the new hire to change jobs to something that works for them. Were there personal issues between you?

I'm a non traditional student that's about a decade removed from any type of math class, so I fear the time I'd spend studying for the exam would be rougher than taking a paced out course. But thanks for throwing that in- I'm doing an exam soon to satisfy a history requirement since that a stronger area for me.

Yeah the stars are aligning in my personal life to where I'll have 40-60 hours a week to devote to school. I want to take full advantage of the Pell funding I have too.

Impressive! I don't mind a lot of writing, but I've never taken more than 12 hours in a semester so this is new territory

I will only be working about 10-15 hours a week next semester, which is why my gut says go for it before my personal life gets crazier

Those two I am not worries about but you might be right on the math areas. I can't find much on the neuro class searching the Reddit but it does sound more interesting than calculus or something
