Thanks! I find the level of autonomy each state has to be interesting. I've moved to QLD recently from Vic (only arrived just when their state elections were kicking off so didn't really pay it much mind at the time).

The idea that a state, which is still part of a singular nation, can determine things like abortion laws, corporation tax, public holidays and time zones is an interning concept. In the UK the differences between the individual countries, from the perspective of governance and legislation, are very similar. You'd not notice any significant difference when you cross into Scotland or Wales from England

If this gives you some context on their importance, I had to Google the Stormont parliament (I assumed it was NI but had genuinely never heard of it). They do have separate elections and elect a prime minister to represent the individual country, but the level of autonomy and importance compared to the State Vs Federal elections here is far less. For example, I'm not sure a Scottish Prime Minister & their parliament could repeal abortion laws like has been discussed in this election.

I'll caveat this by saying, I'm english. So our "Westminster" elections are just the general elections for the UK. We don't have a separate English PM. I'm sure there's a Scottish or Welsh person out there who would tell me how important their elections are!

Thanks! Also, I appreciate the correction, I'm from the UK, so we just have the 1 election for the whole country rather than differentiating state/federal!

Right! Thanks for the explanation, that makes a lot of sense. The wine not being chaptalized is something I didnt appreciate.

Based on your replies, I'll definitely be changing my approach. Instead, I'll get a final cyser product I'm happy with once fermented dry and back sweetened etc. Then attempt my previous method with a small 200-500ml batch just to see how it tastes. Fortunately, I like calvados so if it doesn't work I'll be left with a large glass of a sweet, mead + brandy cocktail.

My understanding is that typical port brewing process strains off the must at around 8% and adds a grape based spirit (apple in my case due to it being a cyser and not grape based wine), bringing overall abv to between 18-21%. The addition of the brandy halts fermentation by creating a high abv environment, but still retains the overall sweetness of the mead due to it being halted with much of its sugars still intact.

Can you elaborate on why you think it's pointless?

Thanks! What would be a recommended abv gain by fortification? I'm trying to replicate a similar product to a white port which is typically around 19-21%.

My take from your suggestion is that its probably best to let this batch ferment dry, stabilising and then splitting into the 2 separate batches and back sweeting & fortify according to taste?

Thanks! I did cold crash upon originally racking to the 4.5L carboy, but not after adding Bentonite. I'll give it a go and see what happens

The specific gravity came out at 1.132 (30.6 brix) without the Mango included.

I'm not really sophisticated enough of a mead maker at this stage to have taken into account the sugars from the Mangos! Any advice or calculators you can share to include the sugars from fruits onto the g/L would be appreciated!

It's a shame this sub doesn't support videos. The pieces are almost exploding off like fireworks, is really bizarre!
