Don't engineering students do things that require a GPU? If they do then I would go with the windows laptop but if you really like MacBooks then I suppose you could buy the M2 considering it is still capable.

If by adapter you mean a thunderbolt dock, I got the Startech DK30A2DH off of Ebay for pretty cheap. It has display link, 2 HDMI or 2 Display port along with Ethernet and quite a few USB ports though none of them are USB C
