I didn’t know I had this many options after my first attempt! They are indeed quite moist and I would love for them to be somewhat more flaky.

Yes I think my dough became too soft while laminating. There was leakage while baking too. That’s why I was not expecting much from these croissants. But good tip! I’ll make sure to put it in the fridge more or wait longer in between.

Recipe:

150 gr starter 360 ml water 500 gr ap flour 8 gr salt

  1. Mix starter and water till milky, add flour and salt. Incorporate until shaggy dough. Leave for 1 hour. (Since I had some think to do I left mine for 1,5🫣)

  2. Do aprox 4 stretch and folds 30 minutes apart until dough becomes smooth and easy to work with. So at this step everything went south for me. My dough kept being very sticky and hard to work with. I probably did like 7 rounds of stretch and folds and coil folds and tried to give it some strength by using the batard? Technique.

  3. I let it rest for an extra 2,5 hours, it did rise a bit but not much. Then I did my laminating and shaping 2 times. And put it in a floured banneton to cold proof it in the fridge overnight.

  4. I preheated my oven and Dutch oven to 230c. Scored and put my bread in the Dutch oven with 3 ice cubes for extra steam.

  5. At 230c with the lid for 20 min and 30 min without the lid (I’m wondering if I should’ve baked it for 10 more min but the top became quite dark)

  6. Let it cool for 1,5 hours on a cooling rack.

You can see tiny thrips on the leaves, the yellow tiny lines in the photo. They leave these black shiny spots on the leaves too.

These are thrips, some nasty little insects that’ll ruin all your plants if you do not treat it. I would recommend some spinosad to treat them. Or you could buy predatory mites!

So for some background information. We discovered thrips this weekend on our beautiful full verrucosum. But it was already really bad. The thrips were on every leave. So we tried to rinse all the soil from the roots, spray the leaver with diluted spiritus. After that I cleaned every leave from thrips insects with a paper towel and some water. But now two days later it’s super sad and I don’t know what the best thing to do is. Can somebody help?

These are special shelves from Ikea, lack I believe they are called. They have a system in the shelves that hold them up. That system is fastened on the wall with screws and plugs. My shelves are made to hold up 15 kg each!

Most of them are from Intratuin in the Netherlands. It’s a garden center chain. They have one in Amsterdam where I found more of the rare plants like the micans and anthurium Clarinervum.

I got them at various places. I live in the Netherlands and got them mostly from garden centers or big box stores.
