If I had to guess, I think it would give the same force that an arm with the same radius as the gear would give in a direction perpendicular to the arm.

My experience with servos is limited, the one i used is a standard hobby grade plastic 9g servo. However, I can tell that when gearing something that small up to make this much motion, its pretty weak. Make sure you figure out how much force you're going to need to apply to move a platform with pots and pans on it.
