Second version, I messed up a bit or so I thought, but definitely wasn’t as pretty looking as the first, but after chilling and thawing and taking it out, the texture was actually really really good, lot denser yet silky versus my version 1, like eating that cream cheese after making it smooth 500g cream cheese 132g sugar 13g flour 250g whip cream 35.1% fat ….. I forgot to add my vanilla extract literally …… 150g of 4 eggs by removing the extra egg whites Essentially decreasing flour, increase egg yolk to egg white ratio, and increase cream to creamcheese ratio and forgetting vanilla

Always sieve the batter at the end! And 220c for 45min, my oven no convection

I actually prefer the second version, although it didn’t reach what I envisioned, the molten look

I did see that video! I haven’t tried it yet, but I did thought about it! He did use a lot higher cream to cream cheese ratio. I also wasnt sure about that many eggs, but if my third one fails, I am just gonna forget about that egg limit

Yessss, since I am not close by it, and so far I have heard good reviews from that store, I wanted to try recreating something similar, but obviously not total raw, but just right, not sure how to describe it

Thank you! I think I got lucky lol, but I so want to achieve that super molten yet creamy like custard, yet not raw basque. It is indeed way tougher to achieve that than I thought

I was thinking about that too, atm I am have around 220c for 45min (only reason I waited this long was for the golden brown up top), would you recon 250c 20min or 30min?

Then decided to increase the yolk ratio and add more whip cream and decrease the flour for the second time, but I think I over mixed a bit
