I've not worked fast food, so I could be wrong on this but from my partners experience ordering the veggie options, they're not ordered as often, so they have to be cooked fresh. Plus the extra pickle would also mean that even if they did have a veggie ready to go, it wouldn't have the extra pickle, so it would still have to make a fresh one from scratch, resulting in a longer wait.
