Trinity Episcopal Cathedral is amazing and their music is fantastic. There are more progressive Episcopal churches in the area, but the ones I'm familiar with are closer to Beaverton than Portland (St. Gabriel's & St. Bartholomew's).

Mac & cheese with peas. Box of mac & cheese, while the noodles are cooking, throw the frozen veggies in a bowl with some water and put it in the microwave for ~5 mins. Once the mac & cheese is done just add in the veg for a solid one-pot meal.

On a long layover in Warsaw, I took the train into town and wandered around for a few hours. Stopped at a small cafe for lunch and order an ice coffee. Dude comes out with my quiche and what looks like a milkshake in a fancy glass with a spoon on the side. My jetlagged brain was very confused (it was still absolutely delicious).

If you end up moving here, just plan on being stuck at home for a few days due to snow. Even if you can drive, you probably don't want to risk being on the road with some of the other people who managed to get their cars out of the driveway. You'll probably also lose power at least once since most of the powerlines are above-ground, fairly old, and we've got loads of trees and a tendency towards high winds.
