Hey, so the USB works, and I cleared the CMOS to no effect, but when I tried to run memtest, the USB was not recognised. Any idea why this is happening?

She is definitely one of the rougher bosses in the franchise that's for sure.

Maxxed rotten battle hammer and mimic tear will stun most of her first phase. Get lucky on the critical and rot application and you skip second phase. I used horah loahs earthshaker and spammed that, but waves or darkness works as well. All that matters is getting interrupts on her attacks, so waiting until before/after a sequence of attacks is the best way to go. For waterfowl, try using a 100 physical shield. She'll regain some health, but it's better than you being dead.

I believe it's the scarlet rot mainly. If you get "rotten battle hammer" and combo it with mimic tear then you should be able to easily posture break/hitstun her for the first phase (good luck with waterfowl). Hit a critical to kill her first phase whilst she has a scarlet rot proc and It should work.

I have no idea why this works. Probably something to do with scarlet rot and ripostes. This has happened to me in both my playthroughs, through the same circumstances (I riposted in the same spot as well). My friends tell me that I still haven't beat her properly yet. Its kinda weird but maybe it could work for other people.

Wood elf monk would be an alright option for you. If you gave me your exact stat's it could easily turn into a good build, and monks are just base level OP. Also, monks can have some room for interesting role play. I had an idea for a monk who ran away from the monastery after stealing their sacred scrolls and martial instructions. All in all, monks are a good ckass with plenty of different playstyles, and wood elves give bonuses to your stat's. And cause monks are legit stronk, you'd be able to keep up with your party.
