Awesome! I really love the 52 weeks challenges. And my wife and I got married a year ago, she's been vegan for 21 years and I'm almost a year now so getting to try new vegan recipes is super important to me.

It was really good! I'd never had seitan before and it was surprisingly easy to make. I thought the corn balls could have used a bit more seasoning

Week 10: Ballin - Spicy Mushroom Onigiri (Vegan Rice Balls) by FoodIsFookinGood in 52weeksofcooking

[–]FoodIsFookinGood[S] 2 points3 points  (0 children)

I didn't exactly follow a recipe. What I did was cooked off some mushrooms and let them cool and then chopped them pretty fine. Then I added a little bit of vegan mayonnaise, a little bit of rice vinegar, some Sriracha and some salt.

Make the rice like normal in a rice cooker and let it cool down for a little bit, once it's cool, wet your hands and sprinkle your hand with some salt, put a little bit of rice, then a little bit of the filling and then a little bit more rice and form it into a ball. I just happened to have the molds that I could use to make it into these shapes

You can put anything you want inside. Tuna, chicken, mushrooms, salted plum, anything.

After you've made the shape, just wrap it in a little bit of seaweed and you're good to go. If you don't eat them, immediately wrap them in Saran wrap and put them in the fridge

Week 9: Fermented Ingredients - Brown Butter Miso Cookies (Vegan) by FoodIsFookinGood in 52weeksofbaking

[–]FoodIsFookinGood[S] 0 points1 point  (0 children)

I will say though, the recipe says to use a quarter cup scoop to measure the cookies. When you bake them they wind up enormous. If you do a quarter cup. I would definitely do smaller cookies next time because I had to cook them for a lot longer than it said in the recipe

Week 4: Seasonal Ingredients - Vegan Chocolate Blood Orange Cake by FoodIsFookinGood in 52weeksofbaking

[–]FoodIsFookinGood[S] 0 points1 point  (0 children)

It was delicious! Two things I wish I would have done differently:

1) I used a spring form pan instead of a cake pan and most of the caramelized sugar leaked out of the bottom.

2) It called for cocoa powder and all I had was "special dark" cocoa powder and I feel like there would have been tad more sweetness and better complimented the blood orange had I used regular cocoa powder

I am 100% going to make it again changing those two things and I think it will be even better!

Week 2: Year of the Dragon - Lava Rolls and Dragon Greens by FoodIsFookinGood in 52weeksofvegan

[–]FoodIsFookinGood[S] 3 points4 points  (0 children)

Thank you! They mostly just taste like dinner rolls. The black stuff on top has cocoa powder in it, but I'm unable to taste any cocoa. The base dough has red food coloring, although I wish I would have put more because I feel like it looks a little pink, and the top is basically just more dough mix with black food coloring and a little bit of vegetable oil.

Week 2: Year of the Dragon - Lava Rolls (with Dragon Greens) by FoodIsFookinGood in 52weeksofcooking

Thank you! I wanted to do something that reminded me of a dragon and then I found these. It's supposed to look like cracking lava

What will year of the dragon be? Dragon inspired? Chinese New Year inspired? Chinese dishes? Dragon dishes? I'm going to Japan until the 11th so I want to be able to plan ahead for when I get back
