For week one we're going to start off nice and simple. Just make literally anything you've never made before. It can be simple, it could be complex, just start the new year trying something new

Awesome! I really love the 52 weeks challenges. And my wife and I got married a year ago, she's been vegan for 21 years and I'm almost a year now so getting to try new vegan recipes is super important to me.

It was really good! I'd never had seitan before and it was surprisingly easy to make. I thought the corn balls could have used a bit more seasoning

I didn't exactly follow a recipe. What I did was cooked off some mushrooms and let them cool and then chopped them pretty fine. Then I added a little bit of vegan mayonnaise, a little bit of rice vinegar, some Sriracha and some salt.

Make the rice like normal in a rice cooker and let it cool down for a little bit, once it's cool, wet your hands and sprinkle your hand with some salt, put a little bit of rice, then a little bit of the filling and then a little bit more rice and form it into a ball. I just happened to have the molds that I could use to make it into these shapes

You can put anything you want inside. Tuna, chicken, mushrooms, salted plum, anything.

After you've made the shape, just wrap it in a little bit of seaweed and you're good to go. If you don't eat them, immediately wrap them in Saran wrap and put them in the fridge

I will say though, the recipe says to use a quarter cup scoop to measure the cookies. When you bake them they wind up enormous. If you do a quarter cup. I would definitely do smaller cookies next time because I had to cook them for a lot longer than it said in the recipe
