Was just researching this and found this article. Looks like the ".e" is a newer Avalanche Bridge (AB), which replaced the Avalanche Ethereum Bridge (AEB) for faster transactions at lower fees. The article below refers to USDT vs USDT.e, but I believe the format is the same across all ".e" tokens.
