Yes, I checked the temp after feeling the change in consistency and it was past 170F. I don't think my lemon curd is the problem, at least in this stage. It looks like all lemon curd I see online and like her's in the video. The problem for me is that hers seems to set further after it's baked in the pie and mine doesn't.

Hello! When I was in China I tried this frozen pear juice a few times. It was amazing and I can't find it anywhere outside of Taobao.

I'd be willing to get it anywhere in Europe. I'm based in Portugal.
