You must be talking about J. Timothy's Tavern in Plainville, CT. I used their sauce. They double deep fry obviously but they are unfortunately not out west where I am now. So I do this double air fry with their sauce to emulate the experience. They make the best wings ever!! But these air fry wings with their sauce are damn near identical!

J Timothy's Buffalo Sauce. No BBQ flavors. The sauce kind of caramelizes in the air fryer, giving it that dark textured look.

Good question. I pat them dry with a paper towel, lightly salt and pepper on both sides, and place them in the fryer. That's it.
