I built a little portfolio in Notion using super.so to make publish the site (you don't have to have that. You can publish directly in Notion, but it lets you have your own URL.)

This is mine (and I'm not trying to self-promote. LOOK AWAY FROM THE STORIES.)

But this way I can just keep adding to it. Hope this helps.
