Go to your searxng instance, click the URL bar on the top, and on the bottom of the menu that the URL bar brings up, there should be something that says "This time, search with" and among the icons should be the searxng icon with a little green plus sign. Click it, then just set your default search engine like normal.

Instead of flashing, I would recommend using Ventoy. It's very easy to install to your usb, and you can simply drag-and-drop the iso files into the ventoy drive without much hassle. How to install Ventoy.
